Here, at Dough&Deer, we pride ourselves on sourcing the finest ingredients and keeping things simple. This helps us to produce a classic Neapolitan style pizza that tastes amazing!

The silent star of our pizza is the tomato sauce and when it comes to sauce... we don’t mess around.  It is so simple, made with only three ingredients and starts with the finest tomatoes in the world, the San Marzano.

The San Marzano tomato is distinctive for its long pointy shape and is grown in rich volcanic soil at the base of Mount Vesuvius, in the Campania region of Italy. The rich soil, hot climate and thin skins helps produce a tomato with a thick flesh and a distinctive sweet taste which is less acidic than other tomatoes. 

San Marzano's are grown under very specific and strict rules, allowing them to have the official DOP (Denominazione d' Origine Protetta) stamp of authenticity of origin.  Only 41 communities, all of which can be found in the Campania Region (Naples, Salerno and Avellino), are recognised for cultivating authentic San Marzano Tomato DOP.

They dont just taste great, the rich soil and sun light also contribute to make the San Marzano one of the most nutritious tomatoes in the world. San Marzano’s are rich in Lycopene which plays a key role in the production of antioxidants in the body as well as Vitamin A, B1, B3, B6, C, E and K.  

Our recipe

The San Marzanos taste so good they need little preparation to produce our delicious sauce. We simply add a pinch of Salt and Fresh Basil and then crush the tomatoes with our hands to avoid splitting the seeds and that’s it, perfection!

Which brand?

Our choice of San Marzano are the Strianese brand produced by the Rega family. The tomatoes were traditionally grown on a small plot of land called the Sarnese Nocerino area which was said to produce the best tomatoes due to its proximity to the foot of Vesuvius, the climate in the region and the pure water sources born from the Sarno Valley that run through the area.
